Cappadocia
Cappadocia, in central Turkey, has been on the UNESCO World Heritage List since 1985 for its fairy chimneys, rock-cut churches and underground cities. You stay in cave hotels in Uçhisar, Göreme, Ürgüp or Ortahisar, 40 minutes from Nevşehir airport. The best seasons are April to June and September to October.
Cappadocia is a volcanic plateau in central Anatolia, more than 1,000 metres above sea level, where erosion has shaped the tuff into fairy chimneys, valleys and cliffs that people dug into for centuries: houses, dovecotes, frescoed churches and underground cities. Göreme National Park and the Rock Sites of Cappadocia have been on the UNESCO World Heritage List since 1985. For a European traveller it is a stay of three to five nights, often combined with Istanbul, in one of the cave hotels that made the region's name.
Choosing your village
The hotels in Sabaro's selection are all within twenty minutes' drive of one another, but each village has its own character.
- Uçhisar is the highest village, below a rock pinnacle riddled with chambers, facing Pigeon Valley. It is home to the hotels with MICHELIN Keys and the best-known labels: Argos in Cappadocia, Museum Hotel, Ariana Sustainable Luxury Lodge, Taşkonaklar and The Rupestral House.
- Göreme sits in the middle of the valleys, where most balloons take off. Its hotels cling to the Aydınlı hillside: Aza Cave Hotel, Sultan Cave Suites and Şah Saray Cave Suites.
- Ürgüp is a small town with restaurants and some evening life. Here you find Kayakapı Premium Caves, a restored cave quarter with a Michelin-starred restaurant, Sacred House and Avantgarde Refined.
- Ortahisar, quieter, lives around its rock castle: Hezen Cave Hotel, Tafoni Houses and Exedra.
- Mustafapaşa, south of Ürgüp, is the most out-of-the-way village, with Signature Cave Cappadocia.
A cave room does not always have a window: several hotels say so themselves for their entry-level categories. For light and a view, a suite or a room with a terrace is often worth the difference. The hotel comparison on this page gives each one's rating and recorded price.
What to see
Göreme Open-Air Museum and the Dark Church
The Göreme Open-Air Museum brings together rock-cut monasteries and churches with Byzantine frescoes. It is open daily from 8 am to 5:45 pm local time, with night visits from 6 to 11 pm. From 1 April 2027 a ticket for foreign visitors costs €22, audio guide included. The Dark Church, Karanlık Kilise, has its own ticket (€7): its frescoes are the best preserved on the site.
Zelve, Paşabağları and the valleys
Zelve is a valley that was inhabited until the 20th century; next door, Paşabağları has the multi-capped fairy chimneys seen in so many photographs (€13 from 1 April 2027). Between Uçhisar and Göreme, the Rose and Red valleys (Güllüdere and Kızılçukur) and Pigeon Valley are free to walk; half a day is enough for one of them. El Nazar Church, between Göreme village and the museum, is open 8 am to 5 pm (€5). Çavuşin church was closed for restoration in October 2026.
The underground cities
Kaymaklı and Derinkuyu are dug over several levels; Derinkuyu is the deepest open to visitors, 33 minutes by road from Göreme. Both are open 8 am to 6 pm and cost €15 each from 1 April 2027. Özkonak, near Avanos, is quieter (€7). The passages are narrow and low: best avoided if you dislike confined spaces.
Ihlara and Soğanlı, two days off the beaten track
The Ihlara Valley, in neighbouring Aksaray province, is a river canyon whose walls are pierced by rock-cut churches. It is 1 h 25 by road from Göreme, open 8:30 am to 5 pm, and costs €16 from 1 April 2027; the Monastery Valley at Güzelyurt, in the same area, costs €5. Allow a full day, with a walk along the river.
The Soğanlı Valley, to the south in Kayseri province, lines up rock-cut churches in a landscape that has stayed rural. It is about an hour by road from Göreme, open 8:30 am to 5:30 pm except Mondays, and free to enter.
If you plan to see a lot, the Museumpass Kapadokya gives three days' access to the museums and sites of Nevşehir and Aksaray provinces; it costs €75 from 1 April 2027.
Hot-air ballooning
The dawn flight over the valleys is Cappadocia's most popular activity. What to know before you book:
- Every flight is cleared that same morning. Turkey's Directorate General of Civil Aviation (SHGM, Sivil Havacılık Genel Müdürlüğü) decides each morning, according to the weather, whether balloons may take off. On 17, 18 and 19 May 2026, for example, none could, because of rain and wind.
- The number of flying days varies a great deal by month. In the first half of 2026 there were 9 flying days in January, 8 in February, 13 in March, 18 in April, 17 in May and 25 in June, according to SHGM figures reported by the Anadolu news agency. In 2025, flights were possible on 223 days. Keep at least two free mornings in your stay, and more from November to March.
- The regional rules. The latest published circular for Cappadocia, dating from June 2019, limits the number of balloons in the air at the same time to 105 in the morning slot, from 30 minutes before sunrise to 11 am local time, and to 65 in the afternoon. It sets each balloon's capacity according to the volume of its envelope, from 20 to 32 passengers, requires 750 flying hours for pilots of 20-seat balloons, and calls for radio communications to be recorded and every flight tracked by GPS. Since December 2025, taking off or landing outside designated areas has been banned, with fines.
- Safety. There have been fatal accidents: in October 2022 two Spanish tourists were killed in a hard landing near Avanos, and other fatal accidents occurred in 2017, 2014 and 2013. France Diplomatie and the Irish Department of Foreign Affairs mention these accidents and ask travellers to check the operator's safety measures. Before booking, ask the operator for its SHGM authorisation and its insurance certificate.
- Price. At one Göreme operator, a one-hour flight in a basket of up to 20 passengers cost €260 per person from April to November, and a 1 h 15 flight in a 16-place basket €330, transfer and breakfast included; a flight cancelled for weather is not charged. The smaller the basket, the higher the price.
Where to eat
Cappadocia earned its first Michelin star with Revithia, the restaurant at Kayakapı in Ürgüp: a tasting menu that revives forgotten Cappadocian dishes, paired with the region's wines from volcanic soil. In Uçhisar, Lil'a at the Museum Hotel, listed by the MICHELIN Guide, serves classic Turkish cuisine; Argos has two restaurants and a rock-cut cellar; at Moniq, Taşkonaklar serves recipes from the village women.
When to go
The best seasons are April to June and September to October. In Nevşehir, 1,260 metres up, the average high is 16.3 °C in April, 25.6 °C in June and 19.1 °C in October. July and August are hot by day, around 29 °C, and dry, with cool nights. Winter is cold: the average low stays below 0 °C from December to February, snow sometimes whitens the fairy chimneys, and balloon flights are rarer. Ramadan 2027 is expected from 8 February to 8 March and the Feast of the Sacrifice starts on 16 May 2027: sites stay open, and there are more Turkish visitors during the holidays.
Getting to Cappadocia
Two airports serve the region: Nevşehir-Cappadocia (NAV), 36 minutes from Göreme, and Kayseri (ASR), 1 h 10 away. Both have domestic flights from Istanbul. Kayseri also has seasonal direct flights from Europe, mostly from Germany, in autumn and winter. By road, Konya is 2 h 55 from Göreme and Ankara 3 h 10, so Cappadocia combines well with Konya and Ankara.
Safety
None of the European foreign ministries followed by Sabaro advises against Cappadocia. Several European ministries call for heightened vigilance across the country, and France and Ireland mention balloon accidents. The "Travel advice" table on this page gives the advice of your country.
